Tomato and watermelon salad

Ingredients:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1/2 cup extra-virgin olive oil
  • 1 pint cherry tomatoes
  • 2 beefsteak or other large tomatoes
  • 1 to 2 teaspoons superfine or granulated sugar
  • 1 tablespoon chopped fresh tarragon
  • 4 strawberries, hulled and cut into small pieces
  • 1 cup cubed cold watermelon

Instructions:

  1. Combine the balsamic vinegar, lemon juice, and olive oil in a bowl. Check the taste and adjust the seasoning with salt and pepper. Put it aside.
  2. Halve the cherry tomatoes and slice the beefsteak tomatoes. Place them in a single layer; season with salt, pepper, and a sprinkle of sugar. Move them to a bowl and pour half of the prepared dressing over them. Add the tarragon and strawberries; mix them together.
  3. Distribute the tomato mixture onto plates. Drizzle with additional dressing and place the watermelon on top. Serve promptly.
