Tomato and polenta summer salad

Delight in the fresh flavors of tomato and savory polenta in this vibrant summer salad. A mix of textures and tastes that will tantalize your senses.

Ingredients:

  • 3 medium heirloom tomatoes, sliced thin
  • olive oil spray
  • 510g Organic Polenta in a tube, sliced into 1/2” pieces
  • 12 Trader Joe’s Tapas Style Grilled Artichokes
  • 4 tablespoons capers
  • 1 tablespoon Trader Joe’s Chili Onion Crunch
  • 2 cups arugula and spinach mixture
  • 2 tablespoons lemon juice
  • salt and pepper to taste
  • 6 basil leaves to garnish

Instructions:

  1. Preheat the grill until it reaches a medium-high temperature. Use olive oil spray to coat both sides of the sliced polenta and add salt. Grill the polenta for 6-9 minutes on each side. Avoid moving the polenta until it's time to flip so that each side gets a nice sear. Once done, take it off the grill and let it rest for 5-10 minutes. For the salad, place a mix of arugula and spinach on a large serving platter and squeeze some lemon juice over it. Arrange the sliced tomatoes and grilled polenta in a slightly overlapping manner. Place the grilled artichokes decoratively around the platter. Sprinkle capers and drizzle Chili Onion Crunch oil over the salad. Add salt and pepper to taste. Finally, garnish with basil leaves.
