Tomato and mozzarella salad with chorizo

Indulge in a delightful tomato and mozzarella salad with a spicy kick of chorizo. This savory dish is bursting with vibrant flavors and textures.

Ingredients:

  • 4 Large Ripe Tomatoes, chopped
  • 4 Cherry tomatoes, halved
  • 2 Spring onions, finely chopped
  • 1 bunch Fresh basil, chopped
  • 1 tablespoon Fresh Parsley, chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Extra virgin olive oil
  • 3 cups Mozzarella (the fresher the better!)
  • 1 cup Chorizo, diced
  • Salt and pepper to taste

Instructions:

  1. Mix thoroughly all the components in a bowl, excluding the chorizo. Heat a frying pan on high. Cook the chorizo until crispy, for about 4-5 minutes. (The chorizo will cook in its own oils and does not require additional fat).
  2. Divide the tomato salad mixture evenly into two serving bowls or plates while the chorizo is cooking. Once the chorizo is done, distribute it evenly between the two bowls, and drizzle the orange-infused oil over the salads (the oils contain plenty of flavor).
  3. Add seasoning to the salad according to taste and enjoy with some crusty bread.
