Tomato and mozzarella cheese salad (insalata caprese) - campania, antipasto

Delight your taste buds with a classic Italian Tomato and Mozzarella Cheese Salad, also known as Insalata Caprese. Originating from Campania, this refreshing antipasto is a perfect combination of flavors.

Ingredients:

  • 4 medium tomatoes, rinse, dry, trim stem, and slice into ½cm rounds
  • 2 balls of mozzarella (200 grams each), drain and tear by hand into bite-sized pieces
  • 8 basil leaves, wash, dry, and coarsely tear
  • 60 milliliters extra virgin olive oil, best quality possible
  • sea salt
  • Black pepper, freshly ground
  • White crusty bread to serve

Instructions:

  1. Arrange the tomatoes on the platter and season both sides with salt and pepper. Arrange the mozzarella and basil in layers to create a circular shape on the plate. Finish by drizzling olive oil over the top and enjoy with some crunchy white bread.
