Tomato and cucumber salad

Fresh and flavorful tomato and cucumber salad recipe. Perfect combination of juicy tomatoes, crisp cucumbers, and zesty dressing. Ideal for a light and refreshing side dish.

Ingredients:

  • 1 cup Peach Dressing
  • 1 medium English cucumber
  • 910g multicolored heirloom tomatoes, cored and cut into 1/3-in.-thick slices
  • ¾ cup thinly vertically sliced red onion
  • ½ cup small basil leaves, divided
  • 1 teaspoon kosher salt, divided
  • .38 teaspoon freshly ground black pepper

Instructions:

  1. In a spacious bowl, place the Peach Dressing. Take off the skin from the cucumber leaving some parts unpeeled; cut it in half lengthwise, remove the seeds, and slice it diagonally. Combine the cucumber, tomatoes, onion, 1/4 cup of basil, 1/2 teaspoon of salt, and pepper with the dressing. Mix thoroughly and allow it to sit for 3 minutes.Place the prepared salad on a serving dish; evenly spread the remaining 1/4 cup of basil and the leftover 1/2 teaspoon of salt on top.
