Tofu and quinoa salad
Delicious tofu and quinoa salad packed with vibrant flavors and nutritious ingredients. Perfect balance of textures and tastes in every bite.
Ingredients:
- 1 package tofu, such as house foods premium tofu or organic tofu, super firm cubed
- 1 cup uncooked quinoa (couscous can be substituted)
- 1 cup canned corn
- 1 small red bell pepper, diced
- ¼ cup pine nuts
- ½ cup seedless grapes, halved
- ½ dried raspberries or cranberries (optional)
- ¼ cup italian parsley, finely chopped
- 1 tablespoon lime juice
- 2 tablespoon olive oil
- ¼ cup wine vinegar
- salt and pepper to taste
Instructions:
- Prepare quinoa as per the directions on the package. Let it cool.
- During the quinoa cooking time, blend lime juice, olive oil, red wine vinegar, salt, and pepper to make the dressing.
- Mix the cooked quinoa with the other components (excluding tofu) and the lime juice dressing, and stir thoroughly.
- Include tofu, stir properly, and garnish with chopped Italian parsley
