Tofu and quinoa salad

Delicious tofu and quinoa salad packed with vibrant flavors and nutritious ingredients. Perfect balance of textures and tastes in every bite.

Ingredients:

  • 1 package tofu, such as house foods premium tofu or organic tofu, super firm cubed
  • 1 cup uncooked quinoa (couscous can be substituted)
  • 1 cup canned corn
  • 1 small red bell pepper, diced
  • ¼ cup pine nuts
  • ½ cup seedless grapes, halved
  • ½ dried raspberries or cranberries (optional)
  • ¼ cup italian parsley, finely chopped
  • 1 tablespoon lime juice
  • 2 tablespoon olive oil
  • ¼ cup wine vinegar
  • salt and pepper to taste

Instructions:

  1. Prepare quinoa as per the directions on the package. Let it cool.
  2. During the quinoa cooking time, blend lime juice, olive oil, red wine vinegar, salt, and pepper to make the dressing.
  3. Mix the cooked quinoa with the other components (excluding tofu) and the lime juice dressing, and stir thoroughly.
  4. Include tofu, stir properly, and garnish with chopped Italian parsley
