Toasted pita & bean salad

Delight in the crispy goodness of toasted pita paired with mixed beans in this vibrant salad. A harmonious blend of flavors and textures awaits.

Ingredients:

  • 1 6 1/2- inch whole-wheat pita bread
  • 4 tablespoons hummus
  • ½ cup mixed salad greens
  • ½ cup Sheet-Pan Roasted Root Vegetables, roughly chopped (see associated recipe)
  • 1 tablespoon crumbled feta cheese

Instructions:

  1. Halve the pita bread. Spread 2 tablespoons of hummus inside each of the pita pockets.
  2. Fill each pita pocket with leafy greens, veggies that have been roasted, and crumbled feta cheese.
