Tip top salad

Ingredients:
- 4 heads iceberg lettuce (1 per person)
- 2 cups diced roast turkey breast (about ½ small breast)
- 1 cup sweetened dried cranberries
- 1 cup diced celery
- 1/2 green apple cored (but not peeled) and diced
- 1 cup crumbled blue cheese
- Candied Walnuts, recipe below
- 1 cup crumbled blue cheese

- 1 cup sour cream
- 1 teaspoon salt
- 2 teaspoons coarse black pepper
- 2 tablespoons fresh lemon juice
- 1 cup walnuts
- 2 tablespoons sugar

- Tip Top Dressing:
- For the 'lettuce bowls': Start by trimming the bottoms of the iceberg heads to create a flat base. Slice off the top portion of each head (around 1 inch thick) and keep them to use as lids later. Use a spoon to hollow out the inside of each lettuce head, forming a bowl shape. Save the excess lettuce pieces for the salad and set aside the 'lettuce bowls'. Chop up the reserved lettuce and mix it with turkey, cranberries, celery, apple, blue cheese, and candied walnuts in a bowl. Gently toss the salad.
- To create the dressing: Mix 1 cup of blue cheese, mayonnaise, and sour cream in a small bowl. Season with salt, pepper, and lemon juice to taste.
- Completing the salads: Add around one-third of the dressing to the salad and mix gently but thoroughly. Gradually incorporate more dressing until the salad is moistened but not overly saturated. Fill each 'lettuce bowl' with the salad mixture. Place the 'lettuce bowls' on plates, cover them with the saved 'lids', and serve.
- Any leftover dressing can be stored in the refrigerator for up to 3 days.
- In a medium skillet over medium-high heat, toast the walnuts by cooking and stirring occasionally until they turn slightly darker and emit a toasted aroma (about 4 minutes with stirring every minute). Increase the heat to high, sprinkle sugar over the walnuts, and continue stirring constantly until the sugar crystallizes and starts to caramelize (approximately 1 minute). Transfer the sugared walnuts to a plate and let them cool.
