Three bean salad

Delight your taste buds with this vibrant three bean salad, bursting with flavors and textures. A nutritious and satisfying dish perfect for any meal.

Ingredients:

  • 230g fresh green beans (trimmed and cut into 1-2? pieces)
  • 1 430g can chick peas, rinsed and drained
  • 1 430g can kidney beans, rinsed and drained
  • 450g cherry tomatoes (halved)
  • 1/2 english cucumber (coarsely chopped (about 1 cup))
  • 1 bell pepper (cored and chopped (I used half red and half yellow))
  • 1/2 cup chopped kalamata olives
  • 1/2 cup chopped red onion
  • 110g crumbled feta cheese

Instructions:

  1. Bring a medium saucepan of water to a boil over high heat. Add the green beans and cook for 3 minutes or until they reach the desired level of tenderness. Drain thoroughly.
  2. Combine all ingredients for the salad in a large bowl and keep it aside.
  3. In a small bowl, mix red wine vinegar, lemon juice, oregano, garlic, dijon mustard, salt, and pepper until blended. While whisking continuously, slowly pour in the olive oil. Taste and adjust seasoning as needed.
  4. Drizzle the desired quantity of the prepared dressing over the salad mixture and gently mix. Serve and savor the dish!
