Indulge in the ultimate loaded cauliflower salad with a medley of flavors and textures, perfect for potlucks and family gatherings.

Ingredients:

  • 3 slices bacon
  • ⅓ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon lemon juice
  • ¼ teaspoon ground pepper
  • ⅛ teaspoon salt
  • 4 cups chopped cauliflower florets
  • ½ cup shredded extra-sharp Cheddar cheese
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh parsley

Instructions:

  1. Fry bacon in a spacious pan on medium heat until it becomes crispy, which usually takes about 5 to 7 minutes. Place the cooked bacon on a plate lined with paper towels to absorb excess fat. Keep 1 tablespoon of the bacon fat in the pan. Cut the bacon into small pieces when it has cooled down a bit.
  2. Combine sour cream, mayonnaise, lemon juice, pepper, salt, and the saved bacon fat in a generous bowl. Mix in cauliflower, cheese, onion, parsley, and the diced bacon. Gently toss everything together until well coated with the dressing.
