The ultimate greek salad

Ingredients:
- 60g (55g) red onion (1/4 medium 8-ounce onion), thinly sliced pole to pole
- 1/4 cup (60ml) red wine vinegar
- 340g (340g) mixed ripe tomatoes, cut into slices and chunks (about 2 heaping cups when cut up)
- 340g cucumber (340g; about 2 small cucumbers), peeled (or partially peeled or unpeeled, if you want some of the bitter skin); quartered lengthwise; and thinly sliced crosswise
- 1/4 cup pitted Kalamata or other briny black olives (about 40g; 40g), see notes
- 1/2 cup (120ml) extra-virgin olive oil, plus more for drizzling
- Kosher or sea salt
- 2 big pinches dried Greek or Mediterranean oregano, divided
- 110g (115g) feta cheese, preferably cut into slabs
Instructions:
- Mix onion with vinegar in a small bowl and allow it to sit while you prepare the rest of the ingredients, around 15 minutes. Then, strain the onions and save the vinegar.
- Combine tomatoes, cucumber, olives, onion, olive oil, and approximately 2 tablespoons (30ml) of the leftover vinegar from pickling the onion in a salad bowl or a large mixing bowl. Add salt, a large pinch of oregano, gently mix everything, and adjust the seasoning with more salt and vinegar according to your preference.
- Place slices of feta on top, sprinkle the remaining oregano, and drizzle with olive oil. Serve with bread to soak up the flavorful juices.
