The jewels of the spring salad: shaved asparagus with burrata, radish & cucumber

Indulge in a delightful dish of shaved asparagus paired with creamy burrata, crisp radish, and refreshing cucumber. This spring salad is a burst of fresh flavors!

Ingredients:

  • 170g radishes, sliced thinly crosswise
  • 170g cucumbers, cut into 1/4-inch dice
  • 230g asparagus
  • 110g burrata
  • 3 stalks young garlic, white and light green parts only, finely minced
  • 4 tablespoons extra-virgin olive oil, more to taste
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon lime juice
  • 1/2 teaspoon lime zest
  • 1 pinch salt and pepper
  • 1 handful micro greens to garnish (entirely optional)

Instructions:

  1. Break off the ends of the asparagus and cut them into thin pieces. Use a peeler to create long, thin strips from the rest of the asparagus spears.
  2. Make the dressing. Mix the vinegar, lime juice, and lime peel in a small bowl and gradually stir in olive oil until smooth. Mix in the fresh garlic and season with salt and pepper to taste. (Taste the dressing and adjust the sourness and seasoning to your liking.)
  3. Place the radishes, cucumber, and asparagus on a platter. Add burrata on top and drizzle with the dressing. Present.
