The eatingwell cobb salad

Delight in the flavors of this classic Cobb Salad recipe from EatingWell. Fresh ingredients come together to create a dish that is both satisfying and delicious.

Ingredients:

  • 3 tablespoons white-wine vinegar
  • 2 tablespoons finely minced shallot
  • 1 tablespoon Dijon mustard
  • 1 teaspoon freshly ground pepper
  • ¼ teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 10 cups mixed salad greens
  • 230g shredded cooked chicken breast, (about 1 large breast half; see Tip)
  • 2 large eggs, hard-boiled (see Tip), peeled and chopped
  • 2 medium tomatoes, diced
  • 1 large cucumber, seeded and sliced
  • 1 avocado, diced
  • 2 slices cooked bacon, crumbled
  • 1/2 cup crumbled blue cheese, (optional)

Instructions:

  1. In a small bowl, combine vinegar, shallot, mustard, pepper, and salt by whisking them together. Gradually add oil while whisking. Take a large bowl and put salad greens in it. Pour half of the dressing over the greens and mix well to cover them.
  2. Separate the greens into 4 plates. Place chicken, egg, tomatoes, cucumber, avocado, bacon, and blue cheese (if desired) evenly on top of the greens. Pour the rest of the dressing over the salads.
