Thai green bean salad

Ingredients:

  • 1/2 teaspoon sriracha sauce
  • 2 teaspoons garlic paste
  • 2 tablespoons brown sugar
  • 2 tablespoons Thai fish sauce (nam pla)
  • 1 juice of one medium lime
  • 1/4 teaspoon peanut oil
  • 8-280g fresh green beans or Thai long beans, cut 1-1/2" - 2"
  • 1/4 cup dry roasted, unsalted peanuts
  • 8-10 Cherry tomatoes, quartered

Instructions:

  1. Combine sriracha, garlic paste, fish sauce, brown sugar, lime juice, and peanut oil in a large bowl. Mix well. Taste a green bean coated with the dressing for spiciness and acidity. Adjust by adding more lime juice or sriracha if needed.
  2. Arrange the green beans in a single layer between two pieces of parchment paper. Fold the edges of the parchment to create a makeshift envelope. Gently bruise the beans using the flat side of a meat tenderizer, being careful not to crush them. You may need to do this in batches. Transfer the beans to the bowl with the dressing. Crush the peanuts using the same parchment method and add them to the bowl. Finally, mix in the tomatoes.
  3. Toss everything together until well combined. Serve immediately or refrigerate for 20-30 minutes before serving for enhanced flavors. Enjoy the dish!
