Thai cucumber salad

Ingredients:

  • 1 cucumber
  • 1/4 cup water
  • 1/4 cup sugar
  • 1/4 cup white distilled vinegar
  • 2-inch piece ginger, peeled and grated
  • 1/4 teaspoon kosher salt
  • 1/2 fresh green Thai chile, deseeded and finely chopped

Instructions:

  1. Trim the edges of the cucumber, then cut it into quarters lengthwise. Proceed to thinly slice the cucumber quarters horizontally using a mandoline or a sharp knife.
  2. In a small saucepan over medium-high heat, combine water, sugar, and vinegar. Bring to a boil and let it simmer until the sugar completely dissolves. Take it off the heat and allow it to cool down.
  3. In a medium bowl, mix the sliced cucumber, ginger, salt, and chile together. Pour the cooled syrup over the mixture and gently stir to blend everything. Enjoy right away or keep refrigerated for a few hours before serving.
