Texas blue crab salad

Ingredients:

  • 6 cloves garlic, minced
  • 2 shallots, minced
  • 60g canola oil
  • 1/2 cup sour cream
  • 60g Boursin cheese
  • 1 1/2 teaspoons green hot pepper sauce
  • 1/4 teaspoon Worcestershire sauce
  • 1 tablespoon cilantro, chopped
  • 2 tablespoons chives, chopped
  • 2 limes, juiced
  • 1 teaspoon salt
  • Cayenne pepper to taste
  • 450g crab claw meat, picked over

Instructions:

  1. Heat canola oil in a medium saute pan and cook garlic and shallots until they become see-through. Take the pan off the heat and let it cool down. In a moderate-sized bowl, combine sour cream with Boursin cheese. Once the mixture is well blended, add hot pepper sauce, Worcestershire sauce, cilantro, and chives. Add lime juice, salt, and cayenne pepper to your liking. Gently fold in crabmeat, garlic, and shallots, being careful not to break apart the crab too much. Spoon the crab salad onto a lavosh piece and serve as an appetizer.
