Tequila lime grilled shrimp with savory tequila watermelon salad

Indulge in the zesty flavors of tequila lime grilled shrimp paired with a tantalizing savory tequila watermelon salad - a delightful culinary experience!

Ingredients:

  • Tequila Lime Shrimp
  • 680g Shrimp, Size 16/20 or larger is prefered
  • 170g Tequila
  • 170g Lime Juice
  • 3/8 cup Extra Virgin Olive Oil
  • 3 pinches Salt
  • 3 pinches Cumin
  • 3 pinches Black Pepper
  • 3 pinches Dill - Fresh
  • Cilantro to Taste
  • Savory Tequila Watermelon Salad
  • 1/2 cup Tequila
  • 1/2 cup Water
  • 1 cup Sugar
  • Juice and Zest of 1/2 Lime
  • 1.5 cups Watermelon - Cubed
  • 1 Ear of Corn
  • 1 Poblano Pepper - Chopped
  • 1 Mango - Cubed
  • 12-16 Basil Leaves - Julienned
  • 2 Jalapeno - Chopped (seeded if desired)
  • 1 Lime - Juiced
  • 6 Green Onions - Chopped
  • 1/2 teaspoon Salt - or to taste
  • 1/2 teaspoon Pepper - or to taste

Instructions:

  1. Tequila Lime Shrimp
  2. Preparation Time: Active time: around 20 minutes, Inactive time: around 1-4 hours | Cooking Time: 7 minutes | Preheat Grill to Medium
  3. Prepare the marinade by mixing all the ingredients except the shrimp.
  4. Peel and devein the shrimp. Place the shrimp in the marinade and refrigerate for 1-4 hours.
  5. Take the shrimp out of the marinade and thread them onto 4 skewers (1 skewer per serving). Keep the marinade aside.
  6. Brush a light coat of oil on the grill grates that have been preheated. Grill the shrimp skewers until they turn pink, which takes about 7 minutes, flipping them once. While flipping the shrimp, baste them with the reserved marinade. About 30 seconds before removing the shrimp from the grill, baste them once more with the marinade and flip them for a final sear.
  7. Remove the shrimp from the grill and let them cool for a few minutes.
  8. Place the shrimp on the salad, either on the skewer or remove them and arrange them around or on top of the salad.
  9. Flavorful Tequila Watermelon Salad

  11. Tequila Lime Simple Syrup: Mix tequila, water, sugar, lime juice, and lime zest in a small saucepan. Boil the mixture and stir until the sugar dissolves. Turn off the heat and let it steep for 20 minutes. Strain the syrup and let it cool.
  12. While the syrup is steeping, dice the watermelon and mango into 1/4 - 1/2 inch cubes.
  13. Mix the cooled syrup with the watermelon and mango, and toss them together. Refrigerate the mixture for 30 minutes.
  14. Grill the corn with the husk on. Once grilled, remove the corn kernels from the cob.
  15. Take out the watermelon and mango mix from the refrigerator and combine it with the remaining ingredients.
  16. Mix well and serve the salad.
