Team colors tomato-pepper salad

Delight in the vibrant hues of this zesty tomato-pepper salad. Bursting with freshness and flavor, it's a colorful addition to any meal.

Ingredients:

  • 3 tablespoons rice vinegar
  • 1 tablespoon canola oil
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper, or more to taste
  • 2 medium cucumbers
  • 4 medium tomatoes, cut into 1/2-inch wedges
  • 1 Vidalia or other sweet onion, halved and very thinly sliced
  • 2 tablespoons coarsely chopped fresh herbs, such as flat-leaf parsley, chives and/or tarragon

Instructions:

  1. Combine vinegar, oil, honey, salt, and pepper in a big wide bowl.
  2. Peel the cucumbers in a striped pattern. Cut them into thin circles. Mix the cucumber slices, tomatoes, and onion into the marinade; mix carefully. Leave it at room temperature for at least half an hour to one hour.
  3. Right before serving, sprinkle in the herbs and mix once more.
