Tapas-style pasta salad

Ingredients:
- 230g gemelli or other short pasta
- 1 teaspoon kosher salt, divided, plus more for pasta water
- ½ cup vegetable oil
- ½ cup blanched whole almonds
- ¼ cup sherry vinegar (such as Don Bruno)
- ¼ cup extra-virgin olive oil
- 1 to 2 teaspoons anchovy paste
- ½ teaspoon fresh oregano leaves, finely chopped
- 110g Manchego cheese, broken into ½-inch pieces (about 1 cup)
- 90g dry-cured Spanish chorizo, sliced ⅛-in. thick (about ¾ cup)
- ½ cup pitted herb-dressed olives, roughly chopped
Instructions:
- Prepare the pasta by boiling it in a big pot with salted water; then, strain it and keep it to one side.
- In a spacious frying pan, warm up vegetable oil over medium heat; put almonds in and keep stirring until they turn golden and start to smell nice, which usually takes around 2 to 3 minutes. Let them dry on paper towels, sprinkle with a quarter teaspoon of salt.
- In a large bowl, mix vinegar, olive oil, anchovy paste, oregano, and the remaining three-quarters teaspoon of salt together. Then, mix in the pasta, almonds, cheese, chorizo, and olives, and stir everything together.
