Taco salad bites
Delight in the fusion of Mexican flavors with these zesty taco salad bites, a perfect balance of crunchy, savory, and spicy in every bite.
Ingredients:
- Nonstick cooking spray, for spraying the wire rack
- 450g ground beef (90/10)
- 2 tablespoons taco seasoning
- Kosher salt
- 16 miniature cup-shaped corn tortilla chips
- 110g pepper jack cheese, cut into 16 cubes
- 3 tablespoons sour cream
- 1 cup thinly sliced romaine lettuce
- 1 small plum tomato, diced
- Hot sauce, for serving
Instructions:
- Place an oven rack in the upper third of the oven and preheat at 220 °C. Place a wire rack on top of a baking sheet and coat generously with cooking spray.
- Combine the ground beef, taco seasoning, and 1/2 teaspoon salt in a medium bowl using your hands until well mixed. Spoon heaping tablespoons of the meat mixture onto the rack (approximately 16 portions), then roll each portion into balls using your hands. Gently press a tortilla chip on top of each meatball, ensuring that the meat covers most of the chip's sides (be cautious not to break the chips). Insert one cheese cube into the center of each chip.
- Bake, turning the baking sheet halfway through, until the meat is cooked through and the cheese is melted, around 8 minutes. Arrange the bites on a large plate, add a dollop of sour cream on top and sprinkle with lettuce and tomato. Serve with your favorite hot sauce.
