Taco salad

Ingredients:
- ½ cup prepared salsa
- ¼ cup reduced-fat sour cream
- 1 teaspoon canola oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 450g 93%-lean ground turkey
- 2 large plum tomatoes, diced
- 1 14-ounce can kidney beans, rinsed
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- ¼ cup chopped fresh cilantro
- 8 cups shredded romaine lettuce
- ½ cup shredded sharp Cheddar cheese
Instructions:
- Mix together salsa and sour cream in a large mixing bowl.
- In a large nonstick skillet, warm up oil over medium heat. Put in onion and garlic, cook and stir frequently until they become soft, which usually takes about 2 minutes. After that, add the turkey and cook while stirring and breaking it up with a wooden spoon until it's completely cooked, around 5 minutes. Add tomatoes, beans, cumin, and chili powder; continue stirring and cooking until the tomatoes start to soften, typically 2 to 3 minutes. Take the skillet off the heat, blend in cilantro and a quarter cup of the salsa and sour cream mixture.
- Integrate lettuce into the remaining salsa and sour cream mixture in the large bowl; mix well. When ready to serve, spread the lettuce evenly among 4 plates, top it with the turkey mix, and finish off by sprinkling cheese over each plate.
