Ingredients:

  • ½ cup prepared salsa
  • ¼ cup reduced-fat sour cream
  • 1 teaspoon canola oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 450g 93%-lean ground turkey
  • 2 large plum tomatoes, diced
  • 1 14-ounce can kidney beans, rinsed
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • ¼ cup chopped fresh cilantro
  • 8 cups shredded romaine lettuce
  • ½ cup shredded sharp Cheddar cheese

Instructions:

  1. Mix together salsa and sour cream in a large mixing bowl.
  2. In a large nonstick skillet, warm up oil over medium heat. Put in onion and garlic, cook and stir frequently until they become soft, which usually takes about 2 minutes. After that, add the turkey and cook while stirring and breaking it up with a wooden spoon until it's completely cooked, around 5 minutes. Add tomatoes, beans, cumin, and chili powder; continue stirring and cooking until the tomatoes start to soften, typically 2 to 3 minutes. Take the skillet off the heat, blend in cilantro and a quarter cup of the salsa and sour cream mixture.
  3. Integrate lettuce into the remaining salsa and sour cream mixture in the large bowl; mix well. When ready to serve, spread the lettuce evenly among 4 plates, top it with the turkey mix, and finish off by sprinkling cheese over each plate.
