Taco salad

Delicious taco salad recipe with fresh vegetables, seasoned meat, crispy tortilla strips, zesty dressing, and creamy avocado. A fiesta of flavors in every bite!

Ingredients:

  • 6 cups romaine lettuce, chopped
  • 2 tomatoes, large diced
  • 2 avocados, cubed
  • 1/4 red onion, thinly diced
  • 1 bunch cilantro, leaves only
  • 2 limes
  • 1 tablespoon olive oil
  • 450g ground beef
  • 1 onion
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1-2 teaspoons chili powder, to taste
  • 1/2 teaspoon coriander
  • salt and pepper

Instructions:

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat until it starts bubbling, then cook the onion for about five minutes until it becomes soft. Add minced garlic, spices, and 1 teaspoon of salt, and cook for another 30 seconds until it becomes aromatic. Mix in the ground beef, breaking it apart with a wooden spoon, and cook for 5 to 10 minutes until it's no longer pink. Set the mixture aside.
  2. In a large serving bowl, combine chopped romaine lettuce, diced tomatoes, cubed avocados, red onion, and cilantro leaves. Lightly drizzle with olive oil.
  3. Spread the taco meat over the salad, squeeze the juice of quartered limes generously on top, and drizzle with a bit more olive oil. Season with salt and pepper to taste.
