Tabbouleh salad with nuts

Ingredients:

  • 1 cup water
  • 3/4 cup bulgur
  • 2 handfuls pine nuts or slivered almonds
  • 1 teaspoon ground cumin
  • 2 lemons, zested and juiced
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup freshly chopped mint leaves
  • 1/2 cup freshly chopped flat-leaf parsley
  • 4 scallions, whites and greens, chopped
  • 2 plum tomatoes, seeded and chopped
  • 1/2 seedless cucumber, peeled and chopped
  • Salt

Instructions:

  1. Place the water in a small saucepan and heat until it starts boiling on medium heat. Then, transfer the bulgur to a bowl, pour the hot water over it, and allow it to sit for 15 minutes.
  2. Toast the nuts in a small pan over low heat until they are lightly browned. Take the skillet off the heat and let the nuts cool down.
  3. In a large salad bowl, mix together the cumin, grated outer skin, and juice of 1 lemon. Slowly whisk in the olive oil. Add the bulgur, herbs, scallions, tomatoes, cucumber, and season with salt to your preference. Toss everything together, let it sit for a few minutes, taste and adjust the seasoning if needed, then toss again before serving.
