Tabbouleh salad with nuts

Ingredients:
- 1 cup water
- 3/4 cup bulgur
- 2 handfuls pine nuts or slivered almonds
- 1 teaspoon ground cumin
- 2 lemons, zested and juiced
- 1/3 cup extra-virgin olive oil
- 1/4 cup freshly chopped mint leaves
- 1/2 cup freshly chopped flat-leaf parsley
- 4 scallions, whites and greens, chopped
- 2 plum tomatoes, seeded and chopped
- 1/2 seedless cucumber, peeled and chopped
- Salt
Instructions:
- Place the water in a small saucepan and heat until it starts boiling on medium heat. Then, transfer the bulgur to a bowl, pour the hot water over it, and allow it to sit for 15 minutes.
- Toast the nuts in a small pan over low heat until they are lightly browned. Take the skillet off the heat and let the nuts cool down.
- In a large salad bowl, mix together the cumin, grated outer skin, and juice of 1 lemon. Slowly whisk in the olive oil. Add the bulgur, herbs, scallions, tomatoes, cucumber, and season with salt to your preference. Toss everything together, let it sit for a few minutes, taste and adjust the seasoning if needed, then toss again before serving.
