Szechwan chicken salad

Ingredients:

  • 2 teaspoons cooking oil
  • 1 teaspoon toasted sesame oil
  • 3 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • ⅓ cup rice vinegar or white wine vinegar
  • 2 tablespoons reduced-sodium soy sauce
  • 3 tablespoons water
  • 4 small skinless, boneless chicken breast halves (340g total)
  • 2 tablespoons water
  • 1 fresh jalapeno pepper, seeded and chopped
  • ½ teaspoon sugar
  • 1 medium carrot, cut into matchstick strips
  • 1 cup peeled jicama cut in matchstick strips
  • 4 lettuce leaves
  • 2 medium cucumbers, quartered lengthwise and cut into 1/4-inch slices
  • 1 ⅓ cups enoki mushrooms
  • 2 green onions, sliced
  • 2 tablespoons chopped unsalted cocktail peanuts

Instructions:

  1. Heat a mixture of cooking oil and sesame oil in a small saucepan over medium-high heat for about 1 minute. Cook garlic and ginger in the hot oil, stirring, for 15 seconds. Remove the saucepan from the heat and add vinegar, soy sauce, and 3 tablespoons of water. Let it cool completely.
  2. Wash the chicken and dry it. Put it in a plastic bag placed in a shallow dish. Pour half of the soy sauce mixture over the chicken, keeping the rest for later. Seal the bag and refrigerate the chicken for 4 to 24 hours.
  3. Meanwhile, mix the reserved soy sauce, 2 tablespoons of water, jalapeno pepper, and sugar in a small bowl to make the dressing. Cover and refrigerate for 4 to 24 hours.
  4. Remove the chicken from the marinade and discard the marinade. Grill the chicken on a lightly greased grill over medium coals, uncovered, for 12 to 15 minutes or until cooked through, turning once. Cut the chicken into small strips. Mix the carrots and jicama in a bowl. When serving, line 4 salad plates with lettuce. Top them with the carrot mixture, cucumbers, grilled chicken, mushrooms, green onions, and peanuts. Stir the dressing and drizzle 1 tablespoon over each serving.
