Sweet & spicy veggie salad

Ingredients:

  • 1/2 head Cauliflower, cut into florets
  • 1/2 head broccoli, cut into florets
  • 15 Brussel sprouts, cut into halves or quaters
  • 3 tablespoons maple syrup
  • 1 tablespoon whole grain mustard
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon cayenne pepper
  • 3 tablespoons Balsamic vinegar
  • 1/4 cup pomegranate seeds
  • Salt and Pepper to taste

Instructions:

  1. Start by preheating the oven to 200 °C.
  2. Prepare two baking sheets by lining them with parchment paper.
  3. For the first baking sheet: arrange the broccoli and cauliflower florets, then drizzle 2 tablespoons of olive oil over them.
  4. Next, sprinkle the vegetables with turmeric and cayenne.
  5. On the second baking sheet: spread out the Brussels sprouts. Pour the maple mixture on top and toss to coat them evenly.
  6. Place both trays of vegetables in the oven and roast for 30-40 minutes, depending on your oven.
  7. When ready to serve: arrange the roasted vegetables on a plate. Top with crumbled feta cheese, pomegranate seeds, and a drizzle of balsamic vinegar.
