Ingredients:
- 1/2 head Cauliflower, cut into florets
- 1/2 head broccoli, cut into florets
- 15 Brussel sprouts, cut into halves or quaters
- 3 tablespoons maple syrup
- 1 tablespoon whole grain mustard
- 4 tablespoons extra virgin olive oil
- 1 teaspoon cayenne pepper
- 3 tablespoons Balsamic vinegar
- 1/4 cup pomegranate seeds
- Salt and Pepper to taste
Instructions:
- Start by preheating the oven to 200 °C.
- Prepare two baking sheets by lining them with parchment paper.
- For the first baking sheet: arrange the broccoli and cauliflower florets, then drizzle 2 tablespoons of olive oil over them.
- Next, sprinkle the vegetables with turmeric and cayenne.
- On the second baking sheet: spread out the Brussels sprouts. Pour the maple mixture on top and toss to coat them evenly.
- Place both trays of vegetables in the oven and roast for 30-40 minutes, depending on your oven.
