Sweet potato salad

Ingredients:

  • 910g sweet potatoes, peeled and cubed
  • Salt
  • 1/2 cup pickled red onions, chopped 
  • 1/2 cup Greek yogurt 
  • 2 tablespoons chopped fresh cilantro 
  • 2 tablespoons lime juice 
  • 1 tablespoon curry powder 
  • 1 tablespoon lime zest 
  • Freshly ground black pepper 

Instructions:

  1. Place the sweet potatoes in a large saucepan filled with cold water and a pinch of salt. Heat over medium-high heat until boiling, then simmer until the potatoes are soft, approximately 15 minutes. Strain the sweet potatoes and allow them to cool in a strainer. Put them into a spacious bowl for serving.
  2. In another bowl, combine pickled onions, yogurt, cilantro, lime juice, curry powder, grated lime peel, and season with salt and pepper. Whisk well to blend the ingredients.
