Sweet potato & okra salad - paleo/gluten-free/vegetarian

Ingredients:
- 1 sweet potatoes, peeled, rinsed and thinly sliced
- 1 handful fresh rocket
- 1 handful cherry tomatoes, halved
- 1 courgette (zucchini), thinly sliced
- 1 pinch Himalayan pink salt
- 1 pinch pepper
Instructions:
- Heat a skillet with a small quantity of oil, then add the sweet potato slices. Sauté for a couple of minutes on each side, then take them out and put aside.
- Arrange the arugula on a plate and top it with the rest of the ingredients.
- Keep in mind to exclude the feta to make it a completely vegan dish.
