Sweet potato & okra salad - paleo/gluten-free/vegetarian

Indulge in the savory flavors of sweet potato and okra in this hearty paleo, gluten-free, and vegetarian salad. Perfect for a healthy and satisfying meal.

Ingredients:

  • 1 sweet potatoes, peeled, rinsed and thinly sliced
  • 1 handful fresh rocket
  • 1 handful cherry tomatoes, halved
  • 1 courgette (zucchini), thinly sliced
  • 1 pinch Himalayan pink salt
  • 1 pinch pepper

Instructions:

  1. Heat a skillet with a small quantity of oil, then add the sweet potato slices. Sauté for a couple of minutes on each side, then take them out and put aside.
  2. Arrange the arugula on a plate and top it with the rest of the ingredients.
  3. Keep in mind to exclude the feta to make it a completely vegan dish.
