Sweet potato arugula salad

Ingredients:

  • ¾ cup of oil
  • ½ cup of apple cider vinegar
  • 2–3 TB of honey
  • 2–3 TB of minced garlic
  • sea salt and pepper to taste.
  • large red onion, cut into thin rings
  • large sweet potato, peeled and cut to bite size pieces
  • 5oz or so of arugula
  • ? cup of feta or parmesan cheese
  • olive oil
  • salt
  • ½ to 1 tsp of sage or other savory spice

Instructions:

  1. Combine all the ingredients by stirring them together and keep aside.
  2. Cook the red onion until it become brown and sweet by heating it gently in a pan with 2-3 tsp of olive oil for about 30-40 minutes, stirring occasionally.
  3. Preheat the oven to 425 and coat the sweet potatoes in spices before placing them on a baking sheet. Roast for 20 to 30 minutes, stirring every 10 minutes. The potatoes should have a slight crispiness. You can also line the baking sheet with foil to make cleaning easier.
  4. Mix together the onions, sweet potatoes, arugula, and cheese.
  5. Customize it to your liking!
