Sweet potato arugula salad

Experience the perfect blend of flavors with this delectable sweet potato arugula salad. Enjoy the unique combination of sweet and peppery taste.

Ingredients:

  • ¾ cup of oil
  • ½ cup of apple cider vinegar
  • 2–3 TB of honey
  • 2–3 TB of minced garlic
  • sea salt and pepper to taste.
  • large red onion, cut into thin rings
  • large sweet potato, peeled and cut to bite size pieces
  • 5oz or so of arugula
  • ? cup of feta or parmesan cheese
  • olive oil
  • salt
  • ½ to 1 tsp of sage or other savory spice

Instructions:

  1. Combine all the ingredients by whisking them together and keep them aside.
  2. Cook the red onion until it turns caramel in a skillet with 2-3 tsp of olive oil over low heat for 30-40 minutes, stirring occasionally.
  3. Preheat the oven to 425 and coat the sweet potatoes in spices before placing them on a baking sheet. Roast for 20 to 30 minutes, stirring every 10 minutes. The potatoes should be tender and slightly crunchy. Using foil on the baking sheet can make the cleaning process easier.
  4. Mix the onions, sweet potatoes, arugula, and cheese together.
  5. Add your preferred dressing as per your taste!
