Sweet corn and beet salad
Delight your taste buds with a refreshing sweet corn and beet salad bursting with fresh flavors and vibrant colors. Perfect for summer gatherings!
Ingredients:
- 2 tablespoons extra virgin olive oil
- 1/2 cup beet greens
- 1/2 cup swiss chard
- 2 tablespoons scallions, thinly sliced
- 3/4 cup beets
- 3/4 cup sweet corn kernels, off the cob
- 1/2 cup feta, small dice
- salt and pepper, to taste
Instructions:
- Preheat convection oven to 180 °C.
- Halve the beets and place them in a roasting pan with 1 tbsp of extra virgin olive oil, salt, and pepper. Cover with foil and roast until tender (around 45 minutes). Let them cool, then peel and dice them.
- Chop the beet greens and swiss chard into small pieces. Cook over medium heat with scallions, 1 tbsp of extra virgin olive oil, salt, and pepper for about 5 minutes. Allow to cool.
- Mix the roasted beets with the sauteed greens, sweet corn, and crumbled feta. Season with salt and pepper.
