Sweet corn and beet salad

Delight your taste buds with a refreshing sweet corn and beet salad bursting with fresh flavors and vibrant colors. Perfect for summer gatherings!

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1/2 cup beet greens
  • 1/2 cup swiss chard
  • 2 tablespoons scallions, thinly sliced
  • 3/4 cup beets
  • 3/4 cup sweet corn kernels, off the cob
  • 1/2 cup feta, small dice
  • salt and pepper, to taste

Instructions:

  1. Preheat convection oven to 180 °C.
  2. Halve the beets and place them in a roasting pan with 1 tbsp of extra virgin olive oil, salt, and pepper. Cover with foil and roast until tender (around 45 minutes). Let them cool, then peel and dice them.
  3. Chop the beet greens and swiss chard into small pieces. Cook over medium heat with scallions, 1 tbsp of extra virgin olive oil, salt, and pepper for about 5 minutes. Allow to cool.
  4. Mix the roasted beets with the sauteed greens, sweet corn, and crumbled feta. Season with salt and pepper.
