Super simple salad

Ingredients:

  • 2 sprigs fresh tarragon, leaves stripped from stems
  • 3 tablespoons (3 splashes) tarragon vinegar or white wine vinegar
  • 1 teaspoon sugar
  • 1 small shallot, peeled and halved
  • 2 teaspoons Dijon mustard
  • 1/2 cup extra-virgin olive oil
  • Coarse salt and black pepper
  • 2 hearts romaine, from pre-washed 3 pack, available in produce section

Instructions:

  1. Mix together tarragon, vinegar, sugar, shallot, and mustard in the bowl of a food processor. Start processing the mixture and slowly add oil in a continuous stream. Once the dressing is well combined and creamy, stop the processor and drizzle the dressing onto the romaine lettuce hearts.
