Summerweight potato salad

Light and refreshing potato salad perfect for summer picnics and barbecues. Packed with flavor from fresh herbs and a tangy vinaigrette dressing.

Ingredients:

  • 3 small red potatoes
  • 2 medium stalks celery, minced
  • 1/2 cup red onion, minced
  • 1/2 cup red pepper, minced
  • 1 teaspoon fresh chopped parsley
  • 1 teaspoon finely minced garlic
  • 1/4 teaspoon brown sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon olive oil
  • salt and pepper

Instructions:

  1. Start by rinsing the potatoes and cooking them in boiling water until they are nearly cooked through.
  2. After the potatoes have cooled down, dice them into small pieces and mix them with diced celery, red onion, and red bell pepper.
  3. Stir together the rest of the ingredients until they are thoroughly combined, then slowly drizzle the mixture over the vegetables while gently mixing to ensure everything is evenly coated. You might not require all of the dressing, or you might need more, depending on how much the potatoes soak up and your personal preference.
  4. Please keep in mind that this recipe is for a smaller portion of the salad. As you are mainly chopping vegetables and tossing them in vinaigrette, you can easily modify the quantities to serve a larger group or just a few people. Feel free to adjust the seasonings to your liking – more garlic, less parsley, etc. Taste as you prepare to get it just right.
