Summer zucchini salad

Ingredients:
- 2 medium zucchini
- 4 medium plums ripe
- 1/2 cup shelled pistachios salted
- 1/4 cup red wine vinegar
- 3 tablespoons extra virgin olive oil

Instructions:
- Finely chop the plums and place them in a small bowl. Combine the plums with red wine vinegar, gently crush them with a fork, and leave them aside.
- Peel the zucchini lengthwise into broad strips using a vegetable peeler.
