Summer zucchini salad

Ingredients:

  • 2 medium zucchini
  • 4 medium plums ripe
  • 1/2 cup shelled pistachios salted
  • 1/4 cup red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • salt and pepper to taste

Instructions:

  1. Finely chop the plums and place them in a small bowl. Combine the plums with red wine vinegar, gently crush them with a fork, and leave them aside.
  2. Peel the zucchini lengthwise into broad strips using a vegetable peeler.
  3. Chop the pistachios finely. Mix the zucchini strips with olive oil, pistachios, salt, and pepper in a medium bowl, then add the plum and vinegar mixture and gently mix to distribute evenly. Serve right away.
