Summer tomato and onion salad

  • 3 Beefsteak, Beefmaster or Big Boy tomatoes
  • 1/2 medium red onion
  • 1/2 cup crumbled gorgonzola or blue cheese
  • 15 kalamata olives
  • 4 tablespoons extra virgin olive oil
  • salt and pepper to taste

Instructions:

  1. Slice the tomatoes into wedges and finely chop the red onion half. Mix everything in a bowl with a little oil poured on top. Season with salt and pepper according to your preference. Serve and savor it at room temperature!
