Summer steak & farro salad

Indulge in a tantalizing mix of juicy steak, hearty farro, and crisp summer veggies. This savory salad is bursting with robust flavors and textures.

Ingredients:

  • 680g flank steak
  • 1 tablespoon light brown sugar
  • 1 tablespoon chili powder
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 450g farro
  • 2 bunches asparagus
  • 2 pints cherry tomatoes
  • 1 cup olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • salt to taste
  • fresh ground pepper to taste
  • 1/2 cup dry roasted, shelled pistachio nuts
  • 110g goat cheese

Instructions:

  1. Mix the ingredients for the dry rub and cover the flank steak with it. Allow the steak to marinate in the refrigerator for at least an hour, or you can leave it overnight if desired.
  2. Follow the instructions on the farro package to cook it. I suggest using semi-pearled farro as it has a quicker cooking time and doesn't require soaking. Make sure to read the cooking instructions on the package before purchasing. Once the farro is cooked, drain it and let it cool down.
  3. Preheat the oven to 425°F. Toss the asparagus with a couple of tablespoons of olive oil, salt, and pepper. Roast in the oven for about 12 minutes until they are tender yet still slightly crunchy. Repeat the same process for the tomatoes, roasting them for approximately 20 minutes.
  4. Whisk together three-fourths of a cup of olive oil, one tablespoon of Dijon mustard, one tablespoon of honey, and season with salt and pepper to taste. Combine this mixture with the cooked farro and spread it out on a large serving platter.
  5. Heat a cast-iron skillet over high heat until it begins to smoke. Place the flank steak in the skillet and cook for 5 minutes on each side. Allow the steak to rest off the heat for 10 minutes before slicing it thinly against the grain. Arrange the steak slices on top of the farro. Present all the prepared components on the platter and serve with red wine. Alternatively, mix everything together and enjoy heartily.
