Summer salad with pea tendrils and garlic scapes pesto

Ingredients:
- 1 head endive - washed & chopped
- 2 small cucumbers - cubed
- 2 small yellow squash - cubed
- 20 grape tomatoes - halved
- 1 handful pea tendrils
- 2 garlic scapes
- 6 cloves garlic
- 2 tablespoons lime juice or 1 lime
- sea salt - to taste
- freshly ground black pepper - to taste
Instructions:
- Rinse and chop the endive lettuce into small pieces Rinse and dice the cucumbers into quarters and then cube them Rinse and dice the yellow zucchini into quarters and then cube them Rinse and halve the grape tomatoes First, place the endive lettuce as the base, then add the rest of the ingredients either in layers or toss them in a large bowl together.
- Put all the items into a food processor, keeping the oil aside Turn on the processor and gradually pour in the oil Pause occasionally to scrape the sides when necessary Serve and savor
