Summer salad
Indulge in the vibrant flavors of summer with this refreshing salad recipe. Bursting with freshness and goodness, this dish is a feast for the senses.
Ingredients:
- 100 grams red quinoa
- 50 grams radish
- 150 grams broad beans
- 100 grams sugarsnap peas
- 30 grams garden peas
- 40 grams lamb lettuce
- 80 grams cherry tomatoes
- 2-3 spring onions
- 1 pomegranate
- 1 lemon
- 2 tablespoons maple syrup
- salt
Instructions:
- Prepare quinoa in a small pot by boiling it for about 20 minutes, then strain and keep aside.
- Take out the fava beans from the hulls and cook in the small pot for around 5 minutes. In the same pot, boil the snap peas for 2-3 minutes.
- In a large bowl, mix quinoa, lamb's lettuce, diced radish & green onion, tomato halves, fava beans, and shelled peas.
- Toss the salad with maple syrup and squeezed lemon juice. Garnish with pomegranate. Enjoy with chilled sparkling water or homemade lemonade.
