Summer potato salad

Ingredients:
- 500g potatoes
- 200g peas, either freshly shelled or frozen
- 1/2 red onion, chopped
- 60g feta, crumbled
- 60g hazelnuts, roughly chopped
- 2 tablespoons chopped fresh dill
- 50g low fat creme fraiche
- 2 teaspoons dijon mustard
- 1–2 teaspoons of honey, to taste
- Juice of 1/2 lemon
Instructions:
- Cook the potatoes in salted water for about 20-25 minutes until they are tender.
- If the potatoes are large or varied in size, cut them into similar-sized pieces to ensure even cooking. Be cautious as cutting them into smaller pieces may result in them becoming too soft and mushy.
- Once the potatoes are cooked, remove them from the water and let them drain.
- If you are using frozen peas, add them to the boiling water and cook according to the package instructions (usually 1-2 minutes).
- After the potatoes have cooled slightly but are still warm, cut them into bite-sized pieces.
- Combine the creme fraiche, mustard, and honey to create a dressing.
- Place the potatoes and peas in a large mixing bowl.
- Coat them with the dressing and incorporate the remaining ingredients.
- Squeeze fresh lemon juice over the salad, adjust the seasoning, and then serve.
