Summer potato salad

Ingredients:

  • 500g potatoes
  • 200g peas, either freshly shelled or frozen
  • 1/2 red onion, chopped
  • 60g feta, crumbled
  • 60g hazelnuts, roughly chopped
  • 2 tablespoons chopped fresh dill
  • 50g low fat creme fraiche
  • 2 teaspoons dijon mustard
  • 1–2 teaspoons of honey, to taste
  • Juice of 1/2 lemon

Instructions:

  1. Cook the potatoes in salted water for about 20-25 minutes until they are tender.
  2. If the potatoes are large or varied in size, cut them into similar-sized pieces to ensure even cooking. Be cautious as cutting them into smaller pieces may result in them becoming too soft and mushy.
  3. Once the potatoes are cooked, remove them from the water and let them drain.
  4. If you are using frozen peas, add them to the boiling water and cook according to the package instructions (usually 1-2 minutes).
  5. After the potatoes have cooled slightly but are still warm, cut them into bite-sized pieces.
  6. Combine the creme fraiche, mustard, and honey to create a dressing.
  7. Place the potatoes and peas in a large mixing bowl.
  8. Coat them with the dressing and incorporate the remaining ingredients.
  9. Squeeze fresh lemon juice over the salad, adjust the seasoning, and then serve.
