Summer pasta salad with feta, arugula, tomatoes & black olives

Delicious summer pasta salad featuring tangy feta, peppery arugula, juicy tomatoes, and briny black olives. Perfect for a light and refreshing meal!

Ingredients:

  • 300 grams pasta ( fusilli, rigatoni, pipe rigate, or cellentani)
  • 2 large tomatoes
  • 2 cups arugula
  • 12 black olives, chopped
  • 200 grams feta cheese, crumbled
  • 4 tablespoons olive oil
  • 4 lemon juice
  • salt & pepper, to taste

Instructions:

  1. Boil the pasta until it is firm but not soft in a big pot of boiled water with salt. Afterward, drain and wash it.
  2. Put the crumbled feta, diced tomatoes, and chopped olives in a big bowl. Then, add the pasta.
  3. Prepare the sauce by combining the olive oil and lemon juice. Season with salt and pepper according to your preference. Pour the sauce over the salad and mix thoroughly.
  4. Just before you serve, mix in the arugula to maintain its crispiness. Combine well and serve!
