Summer green pea salad

Ingredients:

  • 4 cups shelled fresh young green peas
  • 3 tablespoons garlic-flavored olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped scallions
  • 3 tablespoons chopped fresh basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions:

  1. Start by heating a large saucepan with salted water until it boils. Put in the peas and let them cook for 2 to 3 minutes until they are cooked but still a bit firm. Once done, strain the peas and put them in a big bowl. Mix in the oil and vinegar, ensuring the peas are well coated. Allow it to cool down to room temperature.
