Summer corn and tomato salad

Ingredients:

  • 20 ears of corn
  • 6 fresh ripe tomatoes
  • oil, salt, pepper, good quality paprika

Instructions:

  1. Heat up a charcoal grill until it reaches high heat. Meanwhile, bring a large pot of water to a boil and add a generous amount of salt.
  2. Halve all the corn cobs to make it easier to extract the kernels.
  3. Boil the corn in the salted water until it turns bright yellow, then drain and let it dry in the air for a few minutes.
  4. Char-grill all sides of the corn lightly for a mix of slightly charred and uncharred kernels.
  5. Dice the tomatoes and place them in a large bowl.
  6. Take the corn off the grill, remove the kernels from the cobs.
  7. Combine the corn kernels with salt, pepper, and roughly a tablespoon of paprika in the bowl with the tomatoes. Drizzle olive oil and toss until evenly coated.
  8. Taste and adjust the seasoning before serving.
