Summer cold soba salad with mango
Explore the refreshing blend of soba noodles, sweet mango, and crisp veggies in this delightful summer salad bursting with vibrant flavors.
Ingredients:
- 1/2 cup Chopped mangoes
- 1/4 cup Rice wine vinegar
- 3 tablespoons Lime juice
- 1 tablespoon Sesame oil
- 1 tablespoon Soy sauce
- 1 tablespoon Chilli paste
- 1 tablespoon Finely minced ginger
- Salt, to taste
- 100 grams Soba noodles
- 2 Medium mangoes, sliced into matchsticks
- 1 1/2 cups Sliced cucumber (about 2 small cucumbers)
- 1/2 cup Torn basil leaves
- 1/2 cup Torn coriander
- 1/3 cup Peanuts, roughly chopped
- White sesame seeds, to sprinkle on top (optional)
Instructions:
- Prepare the dressing
- Combine all the dressing ingredients in a blender. Blend for approximately one minute until smooth.
- Sample the dressing and add salt to taste if necessary.
- Prepare the salad
- Follow the package instructions to cook the soba noodles. Once cooked, drain and place in a large bowl of ice water to cool for a few minutes. Drain again and set aside.
- In a separate large bowl, mix together the mango, cucumber, mint, basil, and coriander. Add the prepared dressing, chopped peanuts, and cooled soba noodles. Gently toss until everything is well combined.
- Finish by sprinkling white sesame seeds on top. Serve the salad while chilled.
