Summer cold soba salad with mango

Explore the refreshing blend of soba noodles, sweet mango, and crisp veggies in this delightful summer salad bursting with vibrant flavors.

Ingredients:

  • 1/2 cup Chopped mangoes
  • 1/4 cup Rice wine vinegar
  • 3 tablespoons Lime juice
  • 1 tablespoon Sesame oil
  • 1 tablespoon Soy sauce
  • 1 tablespoon Chilli paste
  • 1 tablespoon Finely minced ginger
  • Salt, to taste
  • 100 grams Soba noodles
  • 2 Medium mangoes, sliced into matchsticks
  • 1 1/2 cups Sliced cucumber (about 2 small cucumbers)
  • 1/2 cup Torn basil leaves
  • 1/2 cup Torn coriander
  • 1/3 cup Peanuts, roughly chopped
  • White sesame seeds, to sprinkle on top (optional)

Instructions:

  1. Prepare the dressing
  2. Combine all the dressing ingredients in a blender. Blend for approximately one minute until smooth.
  3. Sample the dressing and add salt to taste if necessary.
  4. Prepare the salad
  5. Follow the package instructions to cook the soba noodles. Once cooked, drain and place in a large bowl of ice water to cool for a few minutes. Drain again and set aside.
  6. In a separate large bowl, mix together the mango, cucumber, mint, basil, and coriander. Add the prepared dressing, chopped peanuts, and cooled soba noodles. Gently toss until everything is well combined.
  7. Finish by sprinkling white sesame seeds on top. Serve the salad while chilled.
