Stuffed peppers

Ingredients:

  • 2 red bell peppers
  • 2 cups reserved brown rice mixture from Brown Rice and Mushroom Salad
  • 1/2 cup shredded mozzarella, divided
  • 1 (15-ounce) can diced tomatoes, drained

Instructions:

  1. Heat up the oven to 180 °C.
  2. Slice the red peppers in half and remove the seeds and membranes. Arrange them on a baking sheet.
  3. Add half of the cheese and all of the tomatoes to the set aside brown rice mixture. Fill the peppers with the rice mixture equally. Sprinkle the remaining cheese over the peppers. Cook until the peppers are soft and the cheese is gooey, for about 25 to 30 minutes.
