Strawberry salad

Ingredients:
- 1 cup slivered almonds
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/2 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 4 cups cleaned and quartered strawberries
- 1/2 cup finely chopped fresh mint
- 4 cups arugula
- 170g goat cheese, crumbled
Instructions:
- Set up a grill for cooking with indirect heat. For charcoal grills, arrange the hot coals on one side only. For gas grills, only heat one side to medium-high heat.
- Place the almonds in a cast-iron pan on the grill and spread them out evenly. Toast until they turn light golden brown and become crispy, which usually takes about 5 to 8 minutes. Take the pan off the grill and put it aside.
- In a big mixing bowl, combine the red wine vinegar, mustard, and honey. Blend in the olive oil while whisking. Season the mixture with salt and pepper. Add the strawberries, mint, and toasted almonds. Mix everything together. Let it sit for around 20 minutes to marinate. Include the arugula and mix well. Sprinkle the crumbled goat cheese on top evenly before serving.
