Strawberry salad
Indulge in the refreshing flavors of a strawberry salad bursting with sweetness, crunch, and drizzled with a zesty vinaigrette. Perfect for a summer's day!
Ingredients:
- 1 cup hulled and halved strawberries, plus 1/2 cup hulled and sliced
- 2 tablespoons white balsamic vinegar
- 1 teaspoon Dijon mustard
- 3 tablespoons extra-virgin olive oil
- 1/4 teaspoon kosher salt
- One 5-ounce container baby arugula
- 1/2 cup sliced almonds, toasted
- 1/2 cup shaved Gorgonzola dolce
Instructions:
- Combine the strawberries cut in half, vinegar, mustard, olive oil, and salt in a blender. Blend on high speed for 30 seconds.
- Place the arugula in a spacious bowl. Scatter the almonds, sliced strawberries, and Gorgonzola over the top. Pour half of the prepared dressing on top. Utilize two wooden spoons to mix all ingredients well. If preferred, offer extra dressing on the side when serving.
