Strawberry burrata salad

Indulge in the exquisite flavors of fresh strawberries paired with creamy burrata in this delightful salad. A perfect blend of sweet and savory!

Ingredients:

  • 1/3 cup extra-virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1 tablespoon honey
  • 450g strawberries, trimmed and halved
  • 1/4 cup pine nuts
  • 140g baby arugula
  • 1/4 cup small basil leaves
  • 1 (8-ounce) ball burrata, room temperature
  • Kosher salt and cracked black pepper
  • Crostini for serving

Instructions:

  1. Heat the oven to 300°F. Combine olive oil, balsamic vinegar, and honey in a medium bowl and mix well until fully combined. Add strawberries to the mixture, stir to cover them with the dressing, and allow them to soak for 15 minutes.
  2. While waiting, place pine nuts on a baking sheet with edges and bake in the oven until they turn slightly brown, which should take around 15 minutes. Remember to shake the pan from time to time to ensure the nuts are evenly toasted. Let the nuts cool down before using them.
  3. Mix arugula and basil together and spread them out on a serving platter. Position the burrata in the center, and gently break it open at the top to reveal the creamy mozzarella inside. Spoon the marinated strawberries and dressing over the arugula. Sprinkle the toasted pine nuts on top, season with salt and pepper, and serve with crostini.
