Strawberry basil spinach salad

Delight your palate with this refreshing strawberry basil spinach salad bursting with vibrant colors and a harmonious blend of sweet and savory flavors.

Ingredients:

  • 260g bag fresh spinach
  • 5 slices thick cut applewood smoked bacon
  • 1/4 cup thinly sliced red onion
  • 3 tablespoons all fruit strawberry jam
  • 3 tablespoons good quality balsamic vinegar
  • 2 tablespoons finely chopped fresh basil
  • 450g fresh strawberries, washed, hulled and quartered
  • 1 Salt and pepper to taste

Instructions:

  1. Put the spinach in a large bowl that is safe to use with heat. Mix it with the red onion.
  2. In a large pan, cook the bacon on medium-high heat until it becomes crispy. Crumble the bacon into small pieces. Save 1 ½ tsp of the bacon fat.
  3. In a small pot, heat up the jam on medium heat. Mix in the balsamic vinegar and the saved bacon fat. Let it come to a boil and then cook for 1 minute. Add the basil. Season with salt and pepper as needed.
  4. Drizzle the hot dressing over the spinach in the bowl. Mix it well so that the spinach wilts and the dressing covers it. Add the strawberries to the spinach mix. Put the salad onto 6 small plates. Sprinkle the crumbled bacon on top of each salad. Serve immediately.
