Strawberry, avocado, & kale summer salad

Indulge in a delightful kale salad featuring the luscious blend of ripe strawberries and creamy avocado, perfect for a taste of summer.

Ingredients:

  • 1 head of kale, thick stems removed and roughly chopped
  • 1/2 cup Strawberries, hulled and sliced
  • 1 avocado, diced
  • 2 tablespoons extra virgin olive oil
  • Juice from one lemon
  • 1 pinch sea salt
  • fresh ground pepper to taste
  • 1/4 cup chopped raw almonds

Instructions:

  1. Combine 1 tablespoon of olive oil, honey, salt, and pepper in a small jar and mix well.
  2. Begin by rubbing the kale leaves. Place chopped kale in a large bowl, add 1 tablespoon of olive oil and squeeze juice from half a lemon. Gently massage the kale with the olive oil and lemon juice using your hands for about 2-3 minutes until the kale becomes tender. Set aside.
  3. Mix together the strawberries, avocado, almonds, and dressing with the kale. Toss everything together, then serve and savor!
