Strawberry and ricotta salad

Ingredients:
- 1 vanilla bean or 1 teaspoon vanilla extract
- 3/4 cup extra virgin olive oil
- 4 tablespoons Champagne vinegar
- 1 tablespoon hot water
- 1/2 tablespoon honey
- 1/2 teaspoon Dijon mustard
- 2 cups sliced strawberries
- 2 cups baby arugula
- 60g sheep's milk farmer’s cheese (or ricotta cheese), crumbled
- 1 cup pistachios, shelled
Instructions:
- To make the Champagne vanilla dressing:
- Open the vanilla bean and remove the seeds inside.
- Mix together the vanilla bean seeds, Champagne vinegar, honey, and Dijon mustard in a bowl. Gradually incorporate the extra virgin olive oil and hot water while blending with a handheld blender on high speed.
- Preparing the salad:
- Mix strawberries, arugula, and pistachios in a bowl. Drizzle dressing over the salad to your preference and mix gently.
- Divide the salad onto separate plates, sprinkle crumbled cheese on top, and present.
