Strawberry and ricotta salad

Delight in the perfect harmony of sweet strawberries and creamy ricotta in this refreshing summer salad. A burst of flavor in every bite!

Ingredients:

  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 3/4 cup extra virgin olive oil
  • 4 tablespoons Champagne vinegar
  • 1 tablespoon hot water
  • 1/2 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • 2 cups sliced strawberries
  • 2 cups baby arugula
  • 60g sheep's milk farmer’s cheese (or ricotta cheese), crumbled
  • 1 cup pistachios, shelled

Instructions:

  1. To make the Champagne vanilla dressing:
  2. Open the vanilla bean and remove the seeds inside.
  3. Mix together the vanilla bean seeds, Champagne vinegar, honey, and Dijon mustard in a bowl. Gradually incorporate the extra virgin olive oil and hot water while blending with a handheld blender on high speed.
  4. Preparing the salad:
  5. Mix strawberries, arugula, and pistachios in a bowl. Drizzle dressing over the salad to your preference and mix gently.
  6. Divide the salad onto separate plates, sprinkle crumbled cheese on top, and present.
