Stone fruit salad

Ingredients:
- 1/4 cup Sherry vinegar
- 1 tablespoon Honey
- 1 tablespoon Shallots, minced
- 1 teaspoon Dijon mustard
- 3/4 cup Extra virgin olive oil
- 2 bunches Butter lettuce, washed and torn
- 1 cup assorted stone fruit, such as cherries, apricots, and plums, cut into bite sized pieces

Instructions:
- Combine the initial four ingredients in a mixing bowl and whisk until they are well mixed.
- Gradually pour the extra virgin olive oil into the vinegar mixture while whisking continuously until it becomes an emulsion. Season with salt and pepper as needed.
- Mix the butter lettuce and stone fruit in a separate bowl. Pour approximately half of the vinaigrette onto the salad and mix well. Adjust the dressing according to your preference.
