Stone fruit salad

Ingredients:

  • 1/4 cup Sherry vinegar
  • 1 tablespoon Honey
  • 1 tablespoon Shallots, minced
  • 1 teaspoon Dijon mustard
  • 3/4 cup Extra virgin olive oil
  • 2 bunches Butter lettuce, washed and torn
  • 1 cup assorted stone fruit, such as cherries, apricots, and plums, cut into bite sized pieces
  • to taste Salt and pepper

Instructions:

  1. Combine the initial four ingredients in a mixing bowl and whisk until they are well mixed.
  2. Gradually pour the extra virgin olive oil into the vinegar mixture while whisking continuously until it becomes an emulsion. Season with salt and pepper as needed.
  3. Mix the butter lettuce and stone fruit in a separate bowl. Pour approximately half of the vinaigrette onto the salad and mix well. Adjust the dressing according to your preference.
